My previous post on puffed rice was churumuri, a spicy lip-smacking street food from south canara. I guess it was 2 years back and since then i have not posted any puffed rice recipe and i was getting several requests for puffed rice recipes. Even though i have shared the spicy mixture recipe recently and i have used murmura as one of the key ingredients in it. But it wasn’t again the main ingredient and was one of the key ingredients. Hence i thought of sharing thisspicy murmura chivda recipe.basically, i got this idea from diet bhel snack offered from haldirams. I have tried to make it very similar to it, but it is less fancy and less spicy compared to the haldirams one.

I roasted the puffed rice in the oven. I feel roasting the murmura in the oven keeps them crunchy for very long time.

While murmura ladoo is extensively available in every grocery store, you can also make it easily at home. All you need to keep in mind is the texture of this ladoo needs to be crispy, but not tough. To roast them in the oven, preheat the oven to 200 F and place the puffed rice in a large baking tray and spread evenly. Place the tray in the middle of the oven and roast for 20 minutes, mixing it once mid way. Murmura will not change color or become brown. Its very commonly used in Indian households to make snacks like bhel puri, murmura mixture and chivda.

Also known as Chawal ke Laddoo, this easy recipe is much loved by Punjabis on the occasion of Lohri. Here is an easy recipe of the same. Always switch off the flame before you add the murmura as it may turn soggy if you keep cooking it. You can use store-bought sev or you can make homemade sev by simply preparing some besan dough, salt and water. Take small portions of the dough and press them in a sev maker directly into into hot oil. Fry the sev till it turns golden brown.

Make sure you break the jaggery into small pieces before adding them to pan to make syrup. This will help avoid formation of any kind of lump. Add roasted chana dal or thinly sliced dry coconut. Soak about 2 cups of rice in warm water and some salt for at least half an hour.
